LE MANI, LA TRADIZIONE

The craft behind the plate

Italian tradition lives in the details: the dough, the shape, the texture, the care.

L’ARTE DELLA PIZZA

Italian soul.
Baked with care.

The Italian art of pizza begins before the bake: kneading the dough, giving it time to rest, shaping it gently, and balancing the toppings so each ingredient has its place.

Steady, controlled heat brings out the best in that tradition. The aim is a golden crust, a tender center, and toppings that come together beautifully.

L’ARTE DELLA PASTA

A tradition shaped
by hand.

Across Italy, pasta-making is a language passed from one generation to the next. Fresh egg pasta begins with flour and eggs, worked into a supple dough, rested, and rolled into a thin sheet—the sfoglia.

Cut into tagliatelle, folded into tortellini, or filled as ravioli, each shape has its own character. Alongside fresh pasta, Italy’s dried durum-wheat shapes have an equally cherished place at the table. The finishing touch is always the meeting of pasta and sauce.

THE STORY BEHIND OUR NAME

Before Perugia,
there was Perusia.

High in the hills of Umbria, in the green heart of Italy, stands Perugia. Known in antiquity as Perusia, the city carries an Etruscan soul beneath its medieval streets. Its monumental Etruscan Arch and the 13th-century Fontana Maggiore tell a story that still lives in stone.

Our name is a tribute to that enduring spirit: the beauty of things made with care, the rhythm of a leisurely meal, and the pleasure of gathering around a table. Not a recreation of the past, but a little of its warmth brought into the present.

“The best things in life are meant
to be savored, not hurried.”

Our first table.
A continuing tradition.

Before Perusia Gourmet in Glen Rock, there was Perusia in nearby Waldwick: a family-owned Italian restaurant, bringing the warmth and care of family tradition to the table.

Its menu gathers the Italian favorites people love—pizza, pasta, calzones, fresh salads, and sandwiches. Familiar flavors, generous plates, and a welcoming room where neighbors come together.

Perusia Gourmet in Glen Rock is the next chapter, carrying the Perusia name forward with a love of Italian food and the Umbrian spirit that runs through our menu.

A LITTLE MORE LA DOLCE VITA

Inspired by Umbria’s unhurried spirit, our idea of wellness is simple: make room for pleasure, variety, and connection. Not a strict set of rules, but an invitation to savor the meal—and the moment.

01 · SEMPLICITÀ

Celebrate simplicity.

Italian food finds beauty in familiar ingredients: tomatoes, greens, olive oil, and herbs. Let their colors and textures bring variety to the table.

02 · EQUILIBRIO

Make room for balance.

A favorite pasta or pizza, a salad to share, vegetables alongside. Balance leaves room for the foods you love, without turning pleasure into a set of restrictions.

03 · CONVIVIALITÀ

Take your time together.

Pass the bread. Pause between bites. Let the conversation linger. The Italian table is as much about being together as it is about what is on the plate.
